Peanut Butter Oatmeal Cookies

1 cup brown sugar

1 cup white sugar

1 cup butter

1 cup peanut butter

2 eggs

2 cups oatmeal

2 1/4 cups flour

1 tsp baking soda

1 tsp baking powder

pinch of salt

2 tsp vanilla

Beat butter, then add both sugars, then the eggs. Add peanut butter. Mix in the rest of the ingredients. Scoop into balls. Bake 350 for 12-15 minutes, depending on your oven. I went about 14 minutes. Let them cool on the pan, then transfer to rack to cool. Drizzle with melted chocolate chips and caramel. Makes about 5 dozen delicious cookies

Strawberry Freezer Jam

Strawberry Freezer Jam

4 cups fresh strawberries
1 1/2 cups sugar
1 package {1.59oz } freezer jam fruit pectin

Stir sugar and pectin together in a bowl
Add 4 cups crushed strawberries. I put mine in the food processor and pulse them. That way it is still chunky and a lot faster than trying to hand mash. 
Pour jam into clean jars to fill line. Let sit 30 minutes until thick. 
This fills about five 8oz. jars. 

I like this recipe because it doesn't call for as much sugar as some of the others we have tried. 
Also you don't have to cook it so it is easy and fast. You can refrigerate it right away, for up to 3 weeks. Or freeze up to 1 year.

Chicken Pesto Stromboli

Chicken Pesto Stromboli

What you need:
Rhodes Rolls Frozen bread Loaf
Pesto Sauce
Spinach
Cooked Shredded Chicken
Mozzarella
Parmesan
Garlic Salt
Egg White

Here is how you do it! 
Thaw bread according to package
On greased counter roll out to a rectangle about the size of a cookie sheet
Spread Pesto all over leaving a 1 inch space from edge
Sprinkle Parmesan on top of that
then sprinkle Mozzarella
Layer you Spinach on that
Last your shredded Chicken
Now you are going to roll it starting at the long end
Roll it all the way so it makes a long tube
Place on a greased cookie sheet, make sure seam is on the bottom
Tuck ends under
Brush with egg whites
Sprinkle with Parmesan and Garlic Salt
Cut slits along the top to vent
Let Rise 30 minutes. Bake @350 until golden brown.

This is super yummy! You could fill it with all different things. Use your imagination. It may seem complicated, but it is not. It is so easy, and the whole fam loves it.

Our Recipe Club

I have a friend Brit and she is so talented, crafty, creative and most of all sweet. She has amazing ideas for everything. She is a fabulous cook. Best Sweet Potatoes

Best Sweet Potatoes

4 Pounds Yams
2 Eggs
1 1/2 Cups Brown Sugar
12 T. Butter
1 t. Salt
2 T. Cinnamon
1 t. Allspice 
1/2 t. Nutmeg

Boil yams until soft. When cool remove skin and place in large bowl. Beat until smooth adding one egg at a time. Add the rest of the ingredients and beat until combine and smooth. Spread in baking dish. Then sprinkle with 1/2 cup Brown Sugar and 1/2 cup melted Butter. 
Bake @ 375 for 25 minutes. 

These are our family favorite. We all love them even the kids. 
They are our Thanksgiving must have.

Chocolate Strawberry Pie

CHOCOLATE STRAWBERRY DELIGHT

Crust:
24 chocolate graham cracker squares finely chopped
½ C butter
¼ C sugar
Combine in a bowl and press in a pie tin

Filling:
1 12oz. container cook whip
1 pkg instant chocolate pudding (3.9 oz not prepared)
1 C. sour cream
Combine in bowl

Topping:
1 oz. semi sweet chocolate
2 t. butter
Melt together and stir until smooth

1 pint strawberries, washed and sliced

Pour ½ filling in pie crust. Add sliced strawberries. Pour remaining filling over strawberries. Drizzle with topping.

Red Pepper Pasta

ROASTED RED PEPPER PASTA

2 roasted red peppers
Or
1 jar roasted red peppers
Blend together with:
1 bar cream cheese
Salt and pepper to taste
1 clove garlic
Parmesan cheese (1/2 c or so)
Pour over cooked bowtie pasta and mix in ½ bag of frozen peas.
Delicious!!!
this is one of my favorite meals in all the world!
